POSITIVELY SCRUMPTIOUS recipe (good protein source)

I just tried this recipe out tonight and it even got rave reviews from our 17 yr. old son!!! FIESTA CUPS 1 --12oz. package of Meatless meat (Morningstar) you can choose either beef or sausage flavored. (normally found next to the Boca Burgers in the frozen food section) 1-- 1.25oz. package of taco seasoning 1 --14oz. can of diced tomatoes w/green chiles 4 oz. of FAT FREE cheese 2 --2.1 oz boxes of mini phyllo shells (found in freezer section next to pastries) 1/4 cup of FAT FREE shredded CHEDDAR CHEESE PREHEAT OVEN TO 350 DEGREES. Place phyllo shells on cookie sheet that has been coated with nonfat cooking spray (if not a nonstick pan only) In a 12inch skillet cook the Meatless meat along with the taco seasoning and the can of diced tomatoes (do NOT drain the tomatoes!) Cook over a medium heat while bubbling ..stirring all the while. As the mixture cooks the moisture will evaporate. That is ok. After cooking these ingredients together you will then drain any extra liquids(if there is any) Stir in the cream cheese and continue stirring til the cheese is all melted. Place 2 tsp. of this mixture into each phyllo cup and top with the shredded FAT FREE CHEDDAR CHEESE. Place into the oven and toast for 5 minutes. You can serve these with a side of sour cream and/or picante sauce or just eat them plain. Talk about lowfat and it has PROTEIN TO BOOT , not to mention hardly ANY SUGAR!!! These small phyllo cups are just right size wise and they store very easily. BON APPETIT' ! Elizabeth~

thanks liz!! im gonna try it... also remember, because RNY folks hardly absorb ANY fat at all, dr. h and his staff have told me to always use the regular kind of cheeses.... todd

i know thats right!! lol.... theres as many opinions as there are surgeons huh pam? but having lost 176 lbs in 11 months and hitting my goal weight(205) buy eating full fat everything, im convinced dr. h. is right!! im glad to, because some of those fat free cheeses are nasty nasty!! lol todd

I believe that folks need to always follow the advice of their nutritionist and their dr. What works for some folks might not work for others..... I know that when I was newly postop I could not tolerate fats at all. It would cause a major disruption in my G.I. tract and unfortunately it still can to this day and I will be 2 yrs. out on September 23rd. For those folks who can tolerate fats with no problem it would not be difficult to just purchase the fully "leaded" cheeses. I would still lean towards using the Morningstar meatless meat. It is much easier to digest and the protein it has is awesome. Again, something good for those who find that they cannot tolerate true meat products. I'm one of those. Weird as I can eat steak, chicken and the like. But give me hamburger, ground round, whatever and it goes over like a lead balloon every time. So using the Morningstar was a wonderful thing for me. You truly cannot taste the difference and the texture is the same as well. Todd-- congrats on getting to goal!! Way to go! Pam.... what is the news on the surgery front? Any positive info??? Todd I use the regular cheese too. Just so we all know how much our bodies can handle, too little fat isn't good either. Helps keep our skin and hair healthy to have some fat in our diets. Many different ways to get it though. This recipe sounds yummy!!
