So I took 3 days off from the gym (out of town for a funeral), didn't eat as good as if I were at home, but I had my biggest one week loss (8 pounds) at my weekly weigh in this morning. Is that "normal"?

The actual weight loss actually is evidenced about three days after the behavior. In the meantime it may be different from your behavior. Sure, you might lose two after sweating or taking a diuretic drink (coffee) but the actual weight takes time.
Many people get discouraged wen they work so hard and it doesn't show on the scale. Well, you may be addin muscle, or the boday may be moving cells around. Thus we also look for non-weight successes such as a change in pant size, or finding you have a rib cage!!
Work hard, enjoy your successes but don't get discouraged over plateaus. (I had one that lasted 7 weeks) Just move towards health and a healthy lifestyle. When you are tinking of long-term success, behaviors are more important than the actual weight on the scale (although they become related!!)

You are doing great! What a difference, eh?
As far as the exercise goes, sometimes the body needs a little rest and the pounds can fluctuate, due to many things. I guess you probably know the real equation to lose is output vs. input. You burn calories moving, so in the long run, it will make you lose more weight.
Have a great week!

I'm down 120 pounds - thanks to RNY! Working on the next 25. Then I'll tackle more...
