POOPBUSTERS: Homemade Protein-Fiber Bars

I have been requested to re-post my recipe for protein-fiber bars.  These days I add more peanut butter, cinnamon and Splenda and I have also made the bars with chocolate protein powder and no cinnamon, but I think it is fun to experiment with such recipes until you land on something that you like.  Enjoy!

Many of us spend an inordinate amount of time praying to the poop gods for blessed relief from the bricks stuck inside us.  A couple of months ago I ran across a protein fiber bar recipe on a bodybuilding site and decided to adapt it for my own purposes.  I use this as a meal replacement.  I am a regular guy again when I have one of these every day.

3 cups dry old fashioned oatmeal
4 scoops vanilla protein powder
1/4 cup bran
1/4 cup golden flax seeds
1/4 teaspoon cinnamon
1 cup milk
1/2 cup creamy peanut butter (I have used PB2, but the bars don't stick together too well)

optional:

1/4 cup sesame seeds (Penzeys sells these in one lb bags for a reasonable price)
1/4 cup almonds and/or sunflower seeds
1/4 cup millet

mix together the dry ingredients first
add milk and PB, stir for two minutes
spread mixture out in 9 x 13 pan
sprinkle with Splenda
refrigerate
divide into 8 (you could adjust this too)

approx 325 calories/bar (more if you add nuts)
14 grams protein
10+ grams fiber

I have made these a number of times -  cut 'em smaller, but they're good!  I use twice the peanut butter, twice the cinnamon (LOVE me some cinnamon!), add sunflower seeds, and stir my splenda in with the other dry ingredients rather than sprinkle it over the top.

I discovered dry-roasted (or maybe it's just roasted?) golden flax at Trader Joe's - I like the tiny bit of crunch these have and will probably use them next time I make the poop bars

Darla:

Dry roasted flax seeds?....I am going to have to try some of those!  I agree with you on the cinnamon, the peanut butter and the Splenda.....recently I have been using 1 Tablespoon of cinnamon, 1 cup of creamy peanut butter and 1/2 to 1 cup of granulated Splenda.

Also, thank you for referring to them as poop bars....I was riding on the commuter trian a few months back and I brought out one of these bars to eat ....it had gotten squished into a log-like shape in my bag and someone thought it looked like I was eating poop.   After that, the people I sat with referred to them as poop bars, which appeals to my adolescent sense of humor.

I love your recipe it looks like a great balance of protein and fiber. I do however, find it interesting, that in the first months post-op, that I was living well on 600 calories a day, now I am maintaining ( but wish I was losing) on about 1500 calories a day. I could eat about six of those bars a day, they look real tasty.
