I have used both old fashioned and the quick cooking oats before.  I like the texture of the old fashioned oats a little better, but you may have a different opinion.  I have even substituted steel cut oats when I ran short of oatmeal.....pretty chewy and a bit gritty, but I ate them anyway.

4 scoops vanilla protein powder
1/4 cup bran
1/4 cup golden flax seeds

optional:

1/4 cup sesame seeds (Penzeys sells these in one lb bags for a reasonable price)
1/4 cup almonds and/or sunflower seeds
1/4 cup millet

mix together the dry ingredients first
add milk and PB, stir for two minutes
spread mixture out in 9 x 13 pan
sprinkle with Splenda
refrigerate
divide into 8 (you could adjust this too)

approx 325 calories/bar (more if you add nuts)
14 grams protein
10+ grams fiber

Update:

I now add 1 Tablespoon of cinnamon, 6 scoops (2 cups of protein powder), 1/2 cup of granulated Splenda, 1/2 cup sunflower seeds, and up to a cup of creamy peanut butter, but you should play with it until you like it.  I have also used chocolate protein powder, some cocoa powder and no cinnamon, but I don't like it as much.  Have fun with it!

I still have a hard time with pork.  Most everything else I can eat now.  But I'm 3 years out. 

As for protien.  I use the purple colored can from Walmart (not sure of the name brand)  and mix that with Ice and some instant coffee with milk (I use soy, because regular milk is hard on my tummy).  Blend it as a smoothie.  They are the best!  You can even add in some SF flavored syrups too.

My hair thinned out too in the first couple of months.  It will grow back and it will get better.
