I've been meaning to post this forever, so here goes.  I use this as a meal replacement, and you can alter it easily to suit your taste.

Banna bread/protein bread

6 eggs (or egg beaters)
2 C cottage cheese
3 T cinnamon, pumpkin pie spice or whatever you like for seasoning (I use both cinnamon and pumpkin pie spice)
10 packets stevia or splenda
2 C old fashioned oats
4 ripe bananas, mashed (or substitute another fruit)
1 T baking powder

Optional:  8 packets bene-protein, and/or 4 t bene fiber.  Nuts are also optional.

Mix all ingredients, pour into greased 9x13 pan.  Bake 1 hr at 350.  Cool, and cut into 4 large pieces.  I eat one piece as a meal, but you can cut smaller, depending on your needs.  This freezes well, and is a great "on the go" breakfast or meal.

OOPS!  I cut it into EIGHT large pieces, not 4, and that's a meal for me.  And I often put cream cheese on it - for a change of pace.

Thanks for posting this.  I have been looking for another protein bread recipe and I love, love, love banana bread.

You're welcome!  I've made your protein/fiber bar recipe as well, and like it too.  I switch off between them.

Thanks Renee!  This sounds like a better, healthier option than grabbing a muffin at Caribou or a bakery.
