Bean Soup Anyone?
Today at coffee I shared some of my bean soup which I've been making for about 20 years. It's super high in protein and has a good flavor. I've always kept my recipe a secret, but I really don't care anymore who knows it, cuz it's not a case of rocket science. Since I cannot eat as much as I could before, the biggest part of making this for me is canning it. Then I can bring it to work and just put it in my desk as a back up meal. I have never gotten tired of eating this soup. For the most part it is low fat (not cream based). The only fat is in ham, and I'm sure that's not too much...and that is optional anyway...but I always add it.
The soup can be served in a bread bowl or it can double as a dip for crackers. I have also sometimes put a dollup of sour creme like you might with chili.
I put my recipe into a PDF with photos. If you want it, send me a PM with your email and I will send you a PDF which you can print out. Once you see the basic idea, you can add or remove seasonings to fit your own tastes. (If your tastes are anywhere like mine, you will not be disappointed following it as closely as possible).
If you have never tried to pressure can, I cannot tell you how wonderful it is. I can Chile, Jalepenos and bean soup. My wife cans just about everything else. I have put canning instructions on my recipe for those who are interested in that route. Pressure canners cost between 60-100 bucks, plus jars/lids. It's not that hard to pull off and it will pay for itself. Buy in bulk...grow in bulk, then can and give away or enjoy.
So PM me if you want in on the Bean Soup Extravagana.
Don't forget to send your email unless you know I already have it.
