Offensive?! You're joking, right?
Quit weighing this week and just focus on nutrition, then weigh on Saturday if it's killing ya. But step away from that damn scale or I'm going to come steal it!
Paula Deen's Flourless Peanut Butter Balls/Cookies.
1 jar (16 oz.) peanut butter
1 1/2 C. Splenda
2 eggs
2 tsp. vanilla extract
Mix all & shape into walnut-sized balls. Roll in sugar or Splenda and place on baking sheet. Bake at 325 degrees for 10 - 12 minutes. Do NOT overbake, they will get crumbly.
Simply Jif p.b. (per 2 T.) = 190 cal, 16g fat, 8g protein, 2 g sugar
Splenda No Cal Granules (per 1 C.) = 96 cal
Egg (per 1 jumbo) = 90 cal, 6g fat, 8g protein
Trail Mix, make-your-own:
1 jar peanuts
1 jar sunflower kernels
1/2 bag raisins or "berries and cherries"
1/2 small bag chocolate chips
1 small bag macadamia pieces
1 small bag pecan halves (I prefer cashews)
*play around with the nuts and fruit, but try to keep proportions the same.
And, of course, my beloved:
Ricotta Fluff!
1 - 32 oz. container of Ricotta cheese
1 - 3 oz. pkg. of Cheesecake flavored SF Instant Jell-O
1/2 C. of Fage yogurt, or if you don't have that, use sour cream but mix by 1/4 cups to find the right taste for you. I use the Fage to get the added protein.
*Mix all together with blender. Chill in fridge overnight.
Eat frequently because it's that dadgum delicious!!!
Or, if you really need some calories and can handle some brown sugar...ya gotta try this from what I hear!

Coat thick sliced bacon with brown sugar, place on baking sheet and bake at 350 degrees for 20 minutes! That's it. *You can add a little cayenne pepper to the brown sugar if you like a little spice.

I totally get why you think you'd offend someone == but no worries sweetie!!!
My suggestion is to munch all day on nuts (hmmmm -- maybe North Peanut Cluster??!!! ....a little here, a little there......Even five nuts every 15 minutes won't overload the carbs for dumping, but will add lots of fat and protein. I love cashews so I eat those when I'm trying to stop losing -- take out a couple of cup fulls and just leave them on the counter. Every time I pass the counter I pop a few. By the end of the day, they are gone and I've added lots of calories, fat and protein.
I know you are worried about forming bad habits with the extra snacking -- but you are too determined to keep your weight in check that you'll be okay -- worry about the "what I need to do now" and stop worrying about the "what might happen" -- you are stronger than you think and you'll do great!!!

I wish I had some SF ideas for you, but you got quite a few here. I'm just sending continued prayers for health your way, along with many hugs!!!

I am having a hard time wrapping my head around high calorie and sugar free in the same sentence, LOL Are you also trying to stay away from fat?
How about protein shakes? Although they don't have high calories, after a few of them, you are at least getting in alot of protein. My new favorite is 2 scoops of dreamsicle flavor PP, 1 cup milk, 6-8 ice cubes and 1 tsp orange kool aid (unsweetened - the real stuff). Maybe bump up the milk to 1%?
If you like liver, you could cook up some chicken livers, blend them up with some lite mayo and eat it with crackers, like pate. May sound gross, but has alot of protein and iron. I ate this during my mashed stage (without the crackers).
I hope you will be back to normal soon!!
