I would like everyone to pick one recipe and share to give everyone different Ideas.  You can't use the same recipe as some one else.  maybe then we won't be in a bind eating the same thing all the time.    here is mine.......

I like to take chicken breast cut em up soak in italian dressing with green peppers, red peppers, and onions.  And then put them on the grill........mmmmmmmgood...

Ok, Marsha.  Now everyone will no my little secret.
I don't cook!  Hate it!  Hubby does it!

So my favorite recipe is simple.  Open a can of refried beans.  Open package of cheddar cheese.  Heat up in microwave.  Eat.

What can I say?  Its got a lot of protein!  Keeps the bed warm at night!

This is a good idea......My problem was Breakfast......I make a batch big enough for the whole family to eat plus there's always left overs........

So I cook, Turkey sausage with onion, green pepper, mushroom, red pepper. And in a seperate pan, cook 4 eggs, mix all together......Yumo.

(I have added cut up potatoes to in the past, but I'm trying to stay away from them now.)

some type of bread:  i have used cereal or crakers.

some kind of liquid : katsup, salsa, soy sause

Cheese to put in tthe middle

Bake intill it looks done.

My new favorite - Turkey Rollups

Take a package of fat free cream cheese and whip it up.  Dice up some Mt. Olive SF Bread & Butter Pickles and stir into the cream cheese.  Spread the mixture onto deli sliced turkey, roll up and slice into 4 pieces.  Yummo!

Marsha, Marsha, Marsha!  This is a fantastic idea sweetie!   I have a ton of recipes whi*****lude:  (sorry, I just can't only post one!)

Modified BLTs:  put bacon, lettuce and mayo into a romaine lettuce leaf.  Fold closed and enjoy!

Any meal:  Eggs, mixed with a little water (as six eggs with four TB water).  Whisk well, put into heated frying pan sprayed with canola oil (or choice) on medium heat.  Once edges are done, (I scrape edges down with heat-proof spatula) add previously blended:  one cup diced lean ham, one cup chopped fresh broccoli, 1/4 cup finely chopped onion,  2/3 cup shredded cheddar (sharp!?!) cheese.  I don't add salt to anything, though season with fresh ground pepper and garlic powder.  I make  this and put into 1/2 cup covered freezer containers.  Freezes well, and great to have on hand.

Multigrain Eggo waffle toasted, add butter, then either fresh blueberries, sliced piece banana, or strawberries.  Use s/f syrup, with one packet Splenda sprinkled on top.

I buy 3 lb bag frozen boneless skinless chicken breasts.  Thaw overnight in fridge, then put into crock pot sprayed with oil, set on low.  Add Italian seasoning, paprika, onion and garlic powder, pepper, and let it cook (takes several hours) .  When done, put individual portions into 1/2 cup freezer containers;  sprinkle fresh grated parmesan on top.  Freezes well and great to have on hand.

Frozen shake/ice cream:  Put three cups milk into mixing bowl.  Add 1/2 tsp vanilla, one packet Splenda, and one mashed banana. (or fresh strawberries, fresh peaches, or for a special treat add strawberries, blueberries, and kiwi fruit)  Add two envelopes s/f Carnation instant breakfast and blend well.  I also add two scoops vanilla protein powder.  Pour into individual freezer 'cups' (I use Gladware  smallest dessert containers (1/2 cup).  Great meal, dessert, or snack.

Put one can f/f black beans into microwavable bowl.  Add your choice amoint of f/f cottage cheese or shredded cheddar.  Nuke for one minute, then add salsa and a tb f/f sour cream.  Blend and enjoy!  This makes two or three servings, depending on your phase.

Hot Beans

8 slices of bacon

1 onion, chopped

Fry bacon, sautee onions until tender, drain grease

1 & 1/2 cup Brown Sugar (Splenda )
1/2 cup  catsup
1 T. Worcestershire Sauce

Combine brown sugar, catsup,worcestershire sauce. Mix well. Set aside.

1 can lima beans
1 can kidney beans
1 can green beans
1 can wax beans
1 can pork 'n beans

Drain all beans accept pork 'n beans. Place in casserole or crock pot.
Pour sauce over the beans. Mix well.

Bake, covered in oven at 350 degrees for one hour. Uncover and cook 15 to 20 minutes longer.

Crockpot....10-12 hours on low
                   4 - 5 hours  on high

For thicker beans, if cooked on low, uncover and turn to high during the last hour.

I sometimes add a pound of cooked ground turkey too.

Tons of protein. They freeze well.

Fried Cauli-'Rice"
Makes 6 - 8 servings

Ingredients:
1 head cauliflower (grates to about 7 cups)
4 - 6 green onions
1 - 2 cloves garlic, or 1 tsp. garlic powder (opt.)
1 tsp ginger (opt.)
4 Tbs. light soy sauce, or to taste
4 eggs, beaten (or 1 cup Egg Beaters)
oil spray


To make it a main dish:
cooked meat, diced (chicken, pork loin, turkey bacon, ham, beef, shrimp, etc., or a combo - leftovers work well)
any other low-carb veggies, as desired



Directions:

1) Using a food processor, process fresh cauliflower until it is the size of rice, either using the plain steel blade or the shredder blade.

Lacking that, you can shred it with a hand-held grater, or just chop it finely with a knife (if you are very patient!).

2) Microwave it in a covered dish. Do not add water; use just the moisture in the cauliflower. Cauliflower will become mushy or gummy if too wet.

This can easily be done ahead of time.

3) Spray a wok or large skillet with non-stick spray and heat. (You can use a small amount of oil, but be sparing, because the cauliflower will soak it up and not taste good.)

4) Fry minced garlic (or garlic powder) with finely diced white part of onions for approximately 1 minute.

5) Add grated cauliflower and fry for 4-5 minutes, stirring constantly.

6) Add soy, ginger, diced green onion tops, and pre-cooked diced meat. Stir to mix well and brown a bit.

7) Push mixture to one side of pan. Spray with more oil as needed, and scramble eggs in empty side of pan until done but still moist.

8) Stir eggs into 'rice' remove from heat, and serve.

I add cooked chicken breast, bean sprouts, and mushrooms to mine.

Stores and re-heats beautifully.

My kids LOVE my confetti meatloaf...

ground turkey
oatmeal instead of crackers
1 can of pureed peas instead of egg
1 small shredded zuchinni
1 small shredded yellow squash
season however you like to taste (I use pleasoning, tsp each of oregano, basil, tyme, parsley, garlic powder)

bake as you would a normal meatloaf. Last 19-15mins baste w/sauce. I make my own out of ketchup, honey, bbq sauce and a dash of hot sauce.

My kids go back for 3rds and 4ths if I've made enough. Normally I make 2 large loaves and there is NEVER any left over.
