Yummy, not too bad Cheesecake Recipe

As I was looking for a good recipe to make for the bbq yesterday I kept coming across all of these cheesecake recipes, so I decided to make one.  The one I made I actually got off the OH-Recipe forum and modified to make it even healthier.  The recipe is below along with the stats for the whole thing and then for 1/8 slice.  1 package SF Cream Cheese Instant Pudding Mix, 1-3/4 cups cold skim milk, 1/2 tub Cool Whip Free, 1/2 -8 oz Fat Free Cream Cheese, Reduced Fat Graham Cracker Crust.  Directions: Prepare jello as stated on the back of the package (whisk packet into 1 3/4 cups of cold skim milk for 2 minutes) then whisk/blend (I didn't have a mixer so I used my whisk to blend it together) in the cream cheese until smooth, blend in cool whip until fully incorporated and then pour into crust and refirdgerate for several hours.  Stats: Full Cheesecake-1245 calories, 24 grams of fat, 197 grams of carbs, 27 grahams protein; 1/8 slice-156 calories, 3 fat, 23.3 carbs, 3.3 protein.  You could reduce the carbs by making individual servings in cups with a single Nilla wafer on the bottom for the crust since about 1/2 the carbs come from the crust or eat it without the crust all together.  I am planning on chopping up some straberries to put over it when I have some later today for my snack.

This sounds yummy.. may have to give it a try... wonder how the individual slices would freeze up? As you would understand, living alone... would be tough eating a whole cheese cake myself......hmmmmm

 I am not short... I am fun sized!!

I completely understand.  I am planning to bring it up with me to my parent's place next weekend to share with them.  I know my mom is always looking for healthy recipes and this is right up her alley!

That sounded so good, I just had to try it.  I didn't have a crust, so just put them in individual tupperwares.  It is to die for...thanks for posting the recipe!

I will have to give it a try. Sounds scrumptious. I will do it without any crust to cut down on the carbs. Thanks for posting.
