What's for dinner during these hot humid days?
We like to grill, too - kabobs are awesome! You get your meats AND veggies all State Fair style - on a STICK!! Just buy whatever veggies you like (we do cherry tomatos, mushrooms, peppers, zuchini, onions, etc...) and any meat you like (we sometimes mix 'em! Beef, pork, chicken, shrimp...). Marinate them in one of the fantastic marinades out there - Lawrys makes a lot, I've noticed Mrs. Dash does too now. Or plain ol' Italian dressing is really good, too!
You can even cook potatos on the grill - cut 'em into 1" cubes, add cut up onions if you're so inclined, wrap them in heavy-duty foil (spray it with cooking spray first) with a few pats of butter and some salt & pepper, and put it on the grill! When the cubes feel soft, they're done!

Imperfect does not = unsuccessful
We do tacos (I have taco salad minus the shell - lettuce, cheese, tomatoes, taco meat) on Monday nights because it's baseball practice so its quick and easy. There was leftover taco meat so I brought a taco salad for lunch for work today.
We also grill a lot - BBQ chicken, burgers (no bun for me), brats, etc....and fresh fruit on the side. Watermelon is a favorite.
Fajitas are good too (chop green/red bell pepper, onion, chicken and stir fry on the stove with a pinch of olive oil and sift in some fajita mix. wrap in a small tortilla).
Tonight I made chicken parmesan. Fresh grated parmesan cheese mixed with Italian bread crumbs in one bowl, melted butter in another bowl. Take boneless, skinless chicken breast and dip both sides in the butter, then dip in the crumbs/parm cheese. Line on cookie sheet and bake about 30 minutes at 375 degrees. Top with spaghetti sauce and a little mozzarella. Serve with pasta for the rest of the family. I just eat the chicken breast. Very yummy!
Chicken salad on whole wheat crackers (or bread/hoagie for dh). Mix about half pound shredded chicken with 5 chopped hard boiled eggs, 2 to 3 finely chopped celery stalks, 1 finely chopped small onion, a tablespoon mustard, salt and pepper and enough Light Miracle Whip to make it nice and moist. (if you don't like the celery and onion chunks like my kids, I've substituted celery salt and onion powder). I've heard of some people adding nuts and cranberries and eating it just plain like that.

Hey Michelle, all of your ideas sound so good. You should share more of your ideas. Do a blog or something.You really have a talent for coming up with new things. And the best part is they sound like you could really do them fast.
