Cheri, Well I don't really have any recipes.  I eat mostly meat off the grill, I have found that Chicken breasts with spices on them off the grill are juicy and awesome. Also pork chops & steak. I eat broiled fish and tuna salad on lettuce. Once in awhile cold shrimp with ****tail sauce or any kind of seafood broiled with a touch of butter. I have made alot of stir fry lately:  I use chicken breasts or ribeye steak, fry in 1 T. oil Then I chop up an onion and green pepper & red pepper pea pods, broccoli and fry that in 1 T. oil. Then I combine them all and add SAN-J traditional Japanese Teriyaki stir-fry & marinade sauce. It's a great meal all in one. Kelly

This isn't really a recipe either, but I LOVE the Gold'n Plump chickens you can buy already seasoned, and all you have to do is put 'em in the oven (they're in cooking bags, so no mess!), fix a veggie (asparagus steamed with a little butter and salt is my FAVORITE!), maybe a potato or Uncle Ben's (I can handle a few T of rice), and VOILA!  The Sweet BBQ is the BOMB!  I really didn't think I'd like it - I THOUGHT I was grabbing a Lemon Garlic flavor bird, but got home & saw I grabbed wrong.  Cooked it anyway, and HOLY MAMA!!!  It's at LEAST as good as one of those rotisserie chickens!  And WAY moist, too!  In fact, I don't care much for the Lemon Garlic, since I've had the Sweet BBQ!  Mesquite is really yummy, too! The 2nd best part?  It's so easy to make them that Bailey can put it in when she gets home from school, then when I get home all I have to do is steam the veggies and make the potatos or rice, and dinner's ready!

Betty Crocker to the rescue here with  spring/summer faves:   I concoct my own recipes, so am guesstimating measured quantities, though you'll get the gist! ( I'm a Miracle Whip gal, though substitute with your preferred choice for mayo!)

Seafood Salad

1 lg can water-pak tuna (drained

1 - 2 small pack (s) imitation crab chunks (cut into small pieces)

four to six hard-boiled eggs

two bunches green onions finely chopped (I mainly use the white ends)

1/2 c lite Miracle Whip

1/2 tsp each:  dry mustard, paprika

1/4 c minced garlic (I prefer the glass jars with olive oil)

Add fresh ground pepper,  and a titch of tumeric to taste

I only use Brownberry Nut  bread, though often wrap a half cup into a romaine lettuce leaf.

 Legal BLTs:

Bacon, tomato, and lite Miracle Whip wrapped into romaine lettuce leaf--I don't miss the toast at all!

Parmesan Garlic Chicken Breasts

Four to six boneless skinless chicken breasts, thawed and cut to preferred portion size

1 small onion, finely chopped

1/2 cup fresh grated parmesan (I use more as I love it!)

Minced garlic as preferred (I use a lot!)

2 Tb butter (or I use lite I Can't Believe It's Not Butter)

Melt butter choice in fry pan--(use low heat so it won't turn brown).  Add chicken breasts.  Pan-brown both sides, turn down heat and add remaining ingredients except for fresh parmesan.  Cover the pan, let mixture immer fifteen minutes, then add fresh parmesan , cover again for ten minutes.  These freeze exceptionally well!

Cheesecake snack/dessert:

One sm box Jello s/f Cheesecake pudding

Two cups skim milk

1 lb fresh strawberries, diced

Two small cartons fresh blueberries

Four ripened kiwi fruit, diced

Prepare one box s/f Jello Cheesecake pudding per box instructions.

In separate bowl, mix together:   strawberries and kiwi fruit, and blueberries.

Fill  bottom of 1/2 c Tupperware/Glad containers with fruit mixture.  Add pudding over. Chill and enjoy!  (I actually prefer more fruit than pudding in my containers, for just a taste of cheesecake flavor).

Excellent snack 'cookie':

Wrap a Dried apricot around a fresh plain almond.  Tasty!

Enjoy!  "Life isn't about waiting for the storm to pass, it's about learning to dance in the rain."  Hugs galore, Patti

HIJACK........ Patti how the heck are you?? Haven't seen much of you  here or on OFF. Did you get the Mystery Box #2??? Darlene is asking about it on OFF. I still need to take some time...hopefully this weekend to pick out the Pics from the Lodge that I want. I am so behind. I have just been gone to Iowa or SSP so much lately. You look great....hope to connect again real soon. Hugs, connie d

Hey Connie-dee'sweetie!  I was gone til late Friday afternoon, and in my mailbox was a notice to pick up a package  at the post office.  Was my weekend to work, and fell/got hurt Sunday, so wasn't able to walk to the post office Mon. or Tues.  Providing it's not pouring rain in the morning, I'll head down and pick it up.  Am meeting a guy from POF for breakfast in the morning, so if there's no chemistry, I'll have a good 'opt-out' and head over to the post office!  Opening the package will be a neat 'pick-me-upper', or, a celebratory notion!  I'm well---just incredibly busy, busy, busy!  Had worked so many weekend during May, as the gal who works my 'off' weekends had been on vacation, though she relieved me at 3:30 p.m. Mon. Memorial day, and I'm thrilled to pieces to be back on the bi-weekend normal schedule.  Nice getting large paychecks, and no regrets, although it just took so much out of this little worn-out body!   I miss you too!  And, thanks so much for the heads up on the package--I did post on the OFF board, and just  haven't taken the time to get over there.  Ugh! Time to re-simplify things here.....take care of you!  Hugs galore, Patti

I LOVE the NoName Salmon filets-they come individually frozen, and I don't thaw them first-just toss one in the frying pan with about 1/4 C of water and put the lid on, turn on the heat to medium and let it steam cook-it is moist and tasty-they are preseasoned!!  yummers!

Hi...my favorite recipe is no recipe.  It is "No Name"  broiled Salmon filets. I make a vegetable medley of zuchinni, yellow squash, and onions tossed in olive oil, seasoned and sauted. Darla is right about the BBQ Chicken from Golden Plump....it is so good and so easy to make. It is so moist and has tons of flavor too. I also like to make chicken fajitas with sauted peppers and onion. I just eat it with out the tortillas. Hugs, connie d
