WLS friendly Shrimp scampi recipe needed....

Does anyone have a WLS friendly shrimp scampi or other shrimp recipe they can share? Cub had a buy 1 get 2 free deal a week or so ago and the shrimp is in the freezer calling to me.... Thank you in advance for any help with recipes for the shrimp... Hugs, Debi

I just got a new cookbook for weight loss surgery and low and behold it has a shrimp scampi recipe! olive oil cooking spray 1/2 cup minced shallots 3 garlic cloves, minced 1 pound large shrimp, peeled and de-vined 1/2 cup white wine 1/4 cup clam juice 1/4 cup fresh chopped parsley 2 tablespoons lemon juice salt & pepper to tase. Heat cooking spray until hot. Saute shallots and garlic for 1 min.  Add shrimp and saute until pink. Stir in wine and clam juice and bring to a boil. Reduce heat to medium and cook 30 seconds.  Add parsley and lemon juice.  Toss well to coat shrimp and cook for 1 minute.  Add salt and pepper to taste.

Debi, I bought the shrimp too. Here's another idea if your interested....... I made Kabobs with mine.....Shrimp, onion, pineapple, green pepper, red pepper, I cooked them on the grill for about 10 minutes. Kelly

The scampi sounds fabulous!  (How the dickens did I miss THAT deal???) I have to admit, shrimp is often my "oops, I don't have anything decent to eat" back-up lunch.  I keep a bag in the freezer, and will just thaw it out (pre-cooked shrimp), mix up some horseradish & ketchup for ****tail sauce, and eat 'em just like that!  I don't know, but it goes down better for me than lunch meats. That scampi, tho - I may have to try that!   Lois - Did the recipe identify portion size for the nutrition info given?

Like Darla, I love them cold with a little ****tail sauce. Great lowfat protein choice. I will also stirfry them with some veggies, I use various FF salad dressings as sauces, or I make a a curry peanut sauce.
