Meatball recipe? And the chicken-Swiss cheese one...

There was a recipe for meatballs posted maybe a month ago.  Could somebody post it again?  I need recipes that's have lots of protein! I made the 'Chicken Swiss Cheese' recipe yesterday and it's really tasty.  My mistake was putting it in a slow-cooker so it would be ready when I go home from class. The stuffing was smooshed into it--other than the flavour, you couldn't tell there was stuffing in there.  The next time I will omit the stuffing.

I can't find the meatball recipe from Linda Anne but here's one from Bonnie...

I make this great dish quite frequently.  You can add ground beef or Italian sausage and it is delish.  With lean burger or sausage the protein is about 23 grams.  WIthout it is about 12 grams.  I used this dish in the pureed stage without the meat. Happy Eating! Bonnie

Baked Ricotta 8 oz of Ricotta Cheese 1/2 cup grated Parmesan 1 large Egg, beaten 1 teaspoon Italian Seasoning salt & pepper to taste 1/2 cup Marinara Sauce 1/2 cup shredded Mozzarella Cheese Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.

That sounds like a good thing for me to try next week!  I would also like the chicken swiss cheese recipe.  Any recipes would be good for the first week or 3 of the diet would be great!

Hi Shannon~ Here's the recipe for the chicken and swiss cheese dish.  You could omit the stuffing. It just mushes up.  Your pouch might not be ready for those carbs anyway. It really is a delicious recipe.  I threw in a bunch of mushrooms I had in the fridge.  I mentioned that I cooked it in the slow cooker so it'd be ready when  I got home from class. Well,  it turns out that the chicken is really soft---and really flavourful when slow cooked. So doing it this way wasn't a BAD thing after all!~

Light Swiss Chicken & Stuffing Casserole

1/2 cup fat-free sour cream

1 box Lower Sodium Chicken Stove Top Stuffing Mix

1 tablespoon fresh chopped chives

6 skinless, boneless chicken breasts

6 slices reduced-fat Swiss cheese, such as Kraft 2% Milk Deli Deluxe Swiss (about 4 1/2 ounces)

10 3/4-ounce can condensed Healthy Request Cream of Chicken soup

1/2 cup fat-free half-and-half or low-fat milk

Canola cooking spray

1/4 cup water 

  • Preheat oven to 350 degrees. Coat a 9 x 13-inch baking dish or 8 x 12-inch baking dish with canola cooking spray. Add sour cream, 1/2 cup of the stuffing mix, and chives to a medium sized bowl; stir to blend.
  • Arrange chicken in the prepared baking dish and spread the sour cream mixture evenly over the top of the chicken breasts (about 2 tablespoons of the mixture per breast). Top each chicken breast with a slice of cheese.
  • Add condensed soup and half-and-half or milk to the bowl with the stuffing mixture in the bowl; stir to blend. Spoon mixture evenly over the cheese covered chicken. Sprinkle the remainder of the stuffing mix evenly over the top of the soup mixture. Spray the tops of the stuffing cubes with canola cooking spray. Drizzle the water over the stuffing.
  • Cover pan well with foil. Bake until chicken is cooked throughout (about 1 hour).

Yield: 6 servings

Per serving: 373 calories, 38 g protein, 32 g carbohydrate, 9 g fat, 3.5 g saturated fat, 87 mg cholesterol, 1 g fiber, 638 mg sodium. Calories from fat: 22%.
