Linda Anne....I made those meat balls today. They are awesome!! I used fresh shredded parmesan cheese,that with the shredded mozzarella......OOOOH  OOOOH!!  They are wonderful and oh so gooey!! Thanks once again for the recipe. Everyone should try these.  Oh yeah...I added a little minced onion too...love onions! Hugs, connie d  Kisses

I just got back from the grocery store and am going to make them with ground chicken instead of beef & pork.  Did you bake or fry them?  I was thinking baking might work nicely since they've got all the ooey gooey cheese in them :)

Yup baked and Amy had a good idea..she put them on a cooling rack and then a pan under so the fat drips off! Hope ya love them!

I will be waiting to hear about some more new and wonderful recipe ideas!!! I like the chicken idea to...might try that next time. I did bake them with a rack too...they were so awesome!! Thanks again sweetie!!! Hugs connie d

The rack idea was perfect!  Didn't burn the meatballs like if I would have tried frying them :)  And the chicken version tasted great.  I put a couple on top of a piece of riccotta bake with some fire roasted tomato sauce and it was the best meal ever! mmmmmmm  (Super high protein meal.)

1 containr (15 oz.) fat-free ricotta cheese 3 Tbsp grated reduced-fat Parmesan cheese 2 large egg whies 1/4 tsp garlic powder Pinch of nutmeg Mix v everything together until smooth and back 20 minutes at 400 degrees. in 8x8 pan. Top with marinara sauce.  (I made my own marinara with fire roasted tomatos.) Makes 6 servings. 134 calories 11 g protein
