Just made a batch of "Diabetic-Friendly" Peanut Butter cookies and they were fab-u-lous!  Here's the recipe. 1 cup low-fat peanut butter 1 cup Splenda 2 eggs 1 teaspoon vanilla Bake for 8-9 minutes in a 350 degree oven.  Gotta love sugar-free and no flour!

I've made those before!  Fantastic!  Lots of protein!!!! I dip them in my coffee!!!!

Is this the recipe Paula Deen made on her show a week or so ago?  I came in half way through, she was using the Splenda on her fork to do the criss-cross pattern...  Sure sounds good & EASY!
