I thought it would be nice to share recipes for the holidays.  I sure need some!  I didn't know there was fat-free 1/2 and 1/2!! Here is one that I haven't tried yet, but sounds like a good replacement for the usually high fat/high sugar eggnog:

Holiday Food Makeover: Eggnog

If you can't imagine the holidays without eggnog, you're in luck! With a few simple modifications, you can start enjoying this traditional holiday drink in Phase 1 of the South Beach Diet. This version uses artificial sweetener in place of sugar and replaces the full-fat dairy products with their low-fat counterparts. It also calls for an egg substitute rather than raw eggs because of the risk of salmonella poisoning.

South Beach Diet Eggnog 1 1/2 cups egg substitute 2 tablespoons artificial sweetener 2 tablespoons vanilla 2 (12-ounce) cans evaporated skim milk 3 cups fat-free half-and-half 1 tablespoon brandy extract Nutmeg

1. Pour 1 1/2 cups egg substitute into a bowl. Add artificial sweetener and mix on medium speed until light and fluffy. Gradually blend in vanilla, evaporated skim milk, fat-free half-and-half, and brandy extract. 2. Chill for 24 hours to allow flavors to blend. To serve, stir well and sprinkle with nutmeg.

This recipe should yield six servings.

Nutritional Information: 181 calories 0 g fat 3 g cholesterol 22 g carbohydrate 15 g protein 0 g fiber 299 mg sodium

Is that your super cute puppy in your avatar!  Ohh....she's so cute I want to squeeze her!  Our pups have got to get together some time after the winter chill has left us! BTW - thanks for the recipe!  I was just thinking I wished I had copied down the pumpkin cheesecake recipe someone posted a while back.  I'll have to go looking for it - cuz I'd love to make that for Christmas! Yes, that is my little devil child, Tallulah, who is being especially devlish this week.   How is hairless Alfie handling this cold weather??   Edi and I are planning on trekking to Eagan - so you better be there!

In everything I bake I use wheat flour and substitute white granulated sugar for splenda!  If you go full bore and substitute the brown sugar for the splenda brown, its just not as good.   I pretty much bake every recipe with plain old splenda and haven't had any bad things yet!
