Just wanted to share a recipe with you all.   last night i made a low carb concoction to replace mashed potatoes. I cooked cauliflower, drained it and then added velveeta and a bit of ranch. mixed it together and served it to ummm, Me, and it had the feel of lumpy mashies. It was great. and my blood
sugar didn't spike!

happy eating!

Before my RNY, I ate cauliflower like ti was going out of style. Post bariatric I was afraid to eat it as its kind of a " gasy" food. Finally 2 years post op I decied it was time. I love it , it was better then I remembered , However I felt bloated and full for over 2 days . Im so bummed. Next time I'll take gas x or bean o before I eat it. thatnsk for the recipe
