Holiday Weekend Check-in

What are you doing/planning for this weekend? 

I work for an auto company, so I have Monday off work.  I am planning to play euchre with a bunch of friends tomorrow night.  I have to make sure I take things I can eat, so I don't eat too many crackers and chips.  Last time I was feeling really loopy for a while an realized it was from carbs and not enough protein.  I ate a protein bar and felt better.  Sunday, we are celebrating my Dad's birthday and my mom is having pizza and salad, so I think I'll just bring a can of tuna or chicken to put on the salad.  Monday, I'm hoping to rest and crochet.  I have a jacket to finish and a baby blanket to get started on.  I hope you all are well and will post as you have time this weekend about how things are going!

I woke up with a headache (having a lot of them around menstrual cycle) and am trying to get going to the gym.  Also planning a trip to Trader Joes today.  I am planning to make this crunchy no carb snack bar recipe today - the pistachio version:

 Hi Jean,

Just planning on taking the kids to a movie today.  I also work in automotive, so I am off Monday too.  Boy Tuesday will be busy!

Salad sounds good.  I like mine with alot of fixins.  Eggs, ham, cheese, bacon, hey sounds like breakfast!

I am retired form the automotive industry so I don't have to go anywhere LOL and I always have Mondays off. LOL

How ever it was darn nice of the UAW to negotiate a day off the celebrate my Birthday every year January 18Th. The same day as that Martin Luther King guy's actual B day too.  Wasn't he lucky to be born the same day I was so we could have a special Monday in January.

Have fun guys!.  I use to get my Birthday off every year.

no Auto Industry here..lol  My hubby is an RUO (Corrections)..so he has to work Monday..and every holiday.  Christmas 2009 was his first Christmas off in 6 years. *sigh*

Not much happening here this weekend. Just crossing my fingers we don't get too much snow this week.  I hate driving in snow, so ready for spring! :)

OK, food update - the butterscotch pound cake from the Bariatric Foodies - was great!  I took it to euchre last night and got compliments from a couple of people and took it to the birthday party today and left some for my dad who is diabetic.   I plan to make this again, but use a chocolate cake mix with chocolate sf pudding mix and thing that would be even yummier!

Second - the snack bars...  Well, you learn something new every day.  I had no idea that coconut oil was a solid, and I couldn't find any at Trader Joes, soooo  I just used canola oil - so my nut bars are a little soupy.  I think I'll scrape the chocolate off the top and put them outside for birds.  I did find coconut oil today at GNC and hear that Hiller's carrys that kind of stuff.  I couldn't find unsweetened coconut and hear Hiller's has that too.  I plan to try them again.  I don't think they need the chocolate topping.
