Hello Everyone,

I went to see Dr. Gluck yesterday for my two week post-op visit, and I weight 288lbs now. I feel just great. My clothes are getting looser. By next Tuesday I should be starting phase lll diet.

Today, I am in the baking mood. I always love to bake around the holidays. Even though I cannot eat what I make, my grandchildren and daughter will be able to enjoy them. I will be making two pumpkin pies, chocolate no-bake cookies, peanut butter cookies, and pumpkin bread. I will also be making me some eggnog.

Have a great day everyone,
Mary

Mary -

Keep up the good work! It sounds like you're doing great and once you progress in your diet plan things get a bit easier for meal planning and variety.

Try this cookie recipe that's perfectly legal for WLS folks and the family will never know they're sugarless and flourless:

Peanut Butter Cookies
1 cup peanut butter
1 cup Splenda
1 egg

Form into balls and press with fork. Bake for 8-10 minutes at 350.

Enjoy!
Pam

Just wondering?
is there any flour, baking soda, baking powder, in your recipe?  And about how many cookies will it make?

Nope, that's the full and complete recipe and it's how I've made it several times in the past. It's a Paula Deen recipe. I just looked it up on the Food Network and it looks like she also adds some vanilla, but I never have. Here's the link.

I'd guess this recipe makes about 24 small cookies. Can't really remember exactly.
