Good Morning Michiganders and anyone else that lurks today

Well I am up early had a great weekend, DH came home with a case of tomatoes that were rejected by the company, so they said take em if you want them. So I canned them got 12 quarts and  couple of freezer bags.

Today I am making some cup cakes for the bake sale in Taylor that supports the Officer that was taken in the line of duty last month.  Texas Road house is also hosting a dinner at the same time. Here are the details if you wish to participate.

What a nice weekend  . . and what a great morning, I actually needed a sweater when I was having coffee on the porch. . . Love this!

Today starts my official "workcation" I have a list I want to get accomplished on my vacation.  So I just took a look at it and it's not to bad.

I am heading up to Sebewaing this morning  to see the house my son is going to rent and check our the pre-schools for him.  We shopped yesterday for fun stuff like a coffee pot, and sheets and towels . l love spending money when it's not mine. .lol

QOTD -  I only have raves today . . life is moving in the right direction and when all is well with your family and friends  . . it is a gentle reminder how God is blessing me once again.

Good morning all!

I had a good weekend -- even if it wasn't exactly what I'd originally planned.  No kayaking at all (when I'd planned to go twice!).  But I got a bunch of shopping done, bunch of errands crossed off the list and even some quality beach time yesterday afternoon.  My closet organization project is coming along slowly, but at least I'm making progress.

QOTD -- I'm getting excited about the OH Conference in Cinci. Bought my King's Island ticket this morning and last night I booked my hotel for Thursday night (staying in Lima). Now I need to figure out which hotel I'm staying at on Sunday night after King's Island -- do I want to stay close to the park or will I have the energy to drive an hour or so north and get something closer to home? We'll see.

Morning all,

Had my shake and viti's this am, now I'm having iced tea.  I made a big batch of Quinoa yesterday, w/ peppers, onions, carrots, peas and sunflower seeds w/ balsamic dressing (kinda make up my own concoction)  so I'll be eating that for days.  YUMMY 

Q: Has anyone else tried Quinoa???  What concoctions have you come up with?

Quinoa with Spinach and Feta Cheese

Quinoa is similar to brown rice, with a higher protein content. This is a delicious side dish or light meal.

INGREDIENTS
1/2 cup uncooked quinoa
1 tsp. extra virgin olive oil
2 cloves garlic, sliced very thin
1 cup fresh spinach
1 ounce feta cheese

DIRECTIONS
Rinse the quinoa in a strainer. (Use a sifter if you don't have a strainer that's small enough.) In a small saucepan, add the quinoa and 1 cup of water. Bring to a boil over high heat, then cover and reduce heat to simmer until water is absorbed, about 10-15 minutes.
Meanwhile, heat a skillet over medium heat and add the olive oil and garlic. Cook the garlic in the oil until the edges of the garlic turns very light brown, being careful not to burn the garlic (reduce heat to low if necessary). When the quinoa is done cooking, add it to the skillet along with the spinach. Stir it together until the spinach wilts. Add the crumbled feta cheese and stir to combine. Makes 2 servings.

*Edit* I discovered why the calorie count was so high. The nutrition info in the database for the quinoa was completely different than what's listed on the box (for the same brand I used). So I changed the info on the quinoa, and now the nutrition info should be correct. Sorry about that!*

How does that taste?  I can't imagine it, but it will help with my Vit K and carotene intake, so I'll have to give it a try.

Hi Mary and everyone,

I've already been to the dog park this morning with Leo.  He wrestled and ran around and had lots of fun.  Its my get-away place, I am so relaxed there.

I had a great weekend too.  I got some canned pickles from friends and I love them.  The homemade are sooo much better than the store bought ones.

qotd:  I have alot on my mind this morning, kids, getting a job, money, all of which can be stressful.  But i am lucky to have my health; my DH has a great job; and my kids are just being normal 6 and 11 yr olds.  So all in all, life is pretty good.
