Sunday and Home Sweet Home !

Good Morning All !  I am home, yes, it is rainy but not as cold as when we left.  We had great weather until we headed home.  Drove through rain almost the whole trip home.  Got stuck in traffic that took us two hours to go 40 miles (I was driving and pulling trailer, didn't enjoy that !)  and as usual since I take over drive halfway through the first days drive I ended up driving through Atlanta at night !  It has never failed.  I take over so DH can get a nap so we can drive later the first night, but with the bad traffic, rain, etc.... he didn't get much sleep.  We should have gotten as far as Nashville but did not.  DH drove all day yesterday, we finally made it home at 8:30.  Dogs went crazy, they hate us being gone.  Then DH left at 6 this morning for a flight to Phoenix.  Dogs didn't know about the time change so they technically slept in (I loved it).  Sitting here enjoying MY OWN COFFEE ! ! !  Put in some Irish Creme flavor and Chocolate, spoiling myself.  

Someone else will have to figure out the QOTD, I can't think of one right now.

I haven't been on this forum in a couple of days.  Hope you had a great time down there.  Did you get a lot of riding in?  A bike just went by.  No sun today, but it's 48*.  Took the dogs for a two mile walk and now they're all sleeping.  Lazy buggers!  Hubby went to the store to get me some capers.  I found a recipe for Caper Baked Chicken on www.allrecipes.com  It's a good site, I've tried a lot of their recipes, and really have liked all of them.  Especially the slow cooker ones.
QOTD:  What is your favorite recipe for?  Right now mine would have to be my Mother's recipe for Chop Suey.  She used molasses in it, and it gives it such a rich flavor!

Last Saturday we rode the bike to Daytona with my GF and her BF.  We had a great time but let me tell you, the passenger seet is so uncomfortable.  Two hours of riding without getting off was hard, you can't fidget much.  We were in bumper to bumper traffic for awhile also.  Then DH's bike quit running at a stop light, our friends didn't notice so once we got it running we pulled over (we were in downtown Daytona) my bf said they had both their phones so I called her and left her a message.  Turned out she didn't have hers only her BF's and I didn't have his number, he didn't have our numbers, she had to call back to the house and ask my MIL for our phone numbers.  My MIL is very hard of hearing and didn't realize it was my BF calling and was worried for the rest of the day since she didn't know who it was that was asking for our numbers, oh, but she did give them to her.  So they called us, finally came back to find us and we were off again. 

The next day my DH went riding with my GF's BF.  We (the women)  didn't go, my GF had a softball game to play in.  All the players are women over 55, one of them is 86.  It is fun to watch.  The weather was awesome!

Good Morning Michiganders

I got up early but late cause of the time change. So at 10 am I had my protein coffee. and a carbsmart yogurt.

Then I made Home made chicken pot pies in casserole dishes One for home and one for the old couple across the street. seems he is beginning to have Alzheimers issues and they took his driving privileges away. And she is doing much better. but He is definitely going down hill fast. Last week he went in one of the neighbors houses and would not leave so she had to call the police on him. Of there 6 children 5 have deserted them and the one that lives with them has alchohal issues, and had no drivers license.  So San cause the Old man and Lady are really sweethearts.

QOTD: Chicken Pot pie. no bottom crust just one on top. Here is the recipe.

Ingredients

    Mixed Vegetables, frozen, 1 package (10 oz)
    Roasted Chicken, 3 cup, chopped or diced
    Celery, sweated, 1 cup, diced
    Onions,sweated, 1 cup, chopped
    Cream of Chicken Soup, 1 can (10.75 oz)
    Chicken Broth, 1 cup (8 fl oz)
    *Skim Milk, 1 cup
    *Flour, white, 2 tbsp
    Butter, salted, 2 tbsp
    Frozen pie crust, 1 crust, single 9"
    Frozen pie crust, 1 crust, single 9"
    *Potato, peeled and dices, 2 small (1-3/4" to 2-1/2" dia)


Directions

1.sweat diced potato for 3 minutes, add Onions and Celery Sweat additional 3 minutes, remove from heat let cool 5 minutes.

2. in a small frying pan melt butter, add flour, when flour is creamy, and milk.

3. In a large bowl Mix diced chicken, potatoes,celery,onion, Cream of chicken soup, Chicken broth, Frozen vegetables,and flour mixture.

4. Put mixture in a 13 x 9 Pyrex baking dish.

5. Open premade pie crust. place overlapping the edges of the two pie crust. press the edges together to make one crust. Top the casserole dish with the crust. then Place 2 or 3 slits in the top of the crust. brush top of crust with milk to keep from burning.

6. Bake for 50 to 60 minutes at 375 degrees.

makes 10 servings.
serve with salad.
