Saturday Sunshine
I can't believe no one has started the thread yet. It's 8:40 already!
Well, it's a beautiful sunshining Saturday morning in the north country. It's been ages since I've seen the sun like this, it's cold tho, only 21*.
I'm drinking my protein chai tea this morning. That's my normal breakfast, either the tea, or protein coffee.
I'm going to make dried cherry scones today out of my Splenda cookbook. They sound wonderful and even have 6 grams of protein.

Good morning!
Enjoying a mug of protein coffee this morning. I've been battling a headache for the past few days that I suspect is a result of dehydration. Slacking on water is a very bad thing. I got in 80oz of water yesterday and the aching dialed down a couple notches... so today is more water. I hate that tylenol doesn't touch stuff like this. I miss my excederin.
I was up until 2:30 playing with my new computer last night. OMG! It's so beautiful. And so fast! I got an amazing deal on a 23" HD monitor and it is seriously gorgeous. Still getting programs installed and all set up for being my homework/graphic design system... so I'll be working on that a bunch today.
Jani - I'd love to see that recipe for the dried cherry scones. I'm considering buying carbolose flour (low carb flour) for another recipe, so this might be more motivation. Mmm... now that I think about it, I have a couple Splenda cookbooks, I wonder if it's in mine.

Dried Cherry and Almond Scones (a real treat)
Non stick cooking spray for the baking sheet
1 large egg plus 1 large egg white
2/3 cup granulated Splenda
1/2 cup low-fat buttermilk
1/3 cup canola oil
1/3 cup non fat dry milk
1/2 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup dried cherries, coarsely chopped
1. Position a rack in the center of the oven and preheat to 350*F. Lightly spray a baking sheet with the cooking spray.
2. Whisk the egg and egg white in a medium bowl until combined. Add the Splenda, buttermilk, oil, dry milk, and almond extract and whis****il mixed. Sift together the flour, baking powder, and baking soda into the bowl and stir just until blended. Stir in the cherries. Spoon 12 equal-sized mounds onto the prepared baking sheet.
3. Bake until the undersides of the scones are golden brown (*lift one gently with a spatula to check), 12 to 15 minutes. Serve warm.
When mixing quick breads, scones, and muffins, do not overbeat the batter. Excessive stirring will toughen the gluten in the flour and create air bubbles that make the batter rise unevenly during baking. Stir the batter just until all of the ingredients are moistened.
