It's my favorite dinner
make a meatloaf using your own recipe,
I use 1/2 ground round and 1/2 ground turkey
chopped onion
1 egg
either crushed crackers/fiber one/or oatmeal depending on what I have around
pepper to taste . . I don't cook with salt
I mix together and put in a 9 x 13 pan or a 9 x 9 depending on how much meat mixture I have
spray pan with pam and press out like Pi*** dough about 1 1/2 inch thick - bake at 350 until done about 35 minutes - (mixture will shrink as it cooks)
When cooked I remove it from the pan and squeeze between paper towels to get all grease out, place on a cookie sheet top with pizza sauce or spag sauce, make sure you use a good amount as it seems to soak into the meatloaf. Add veggies on top of sause -
I put mushrooms, yellow peppers and olives on mine then top with motz cheese and put under the broiler until the cheese melts.
When I make this for my family I use a 9 x 13, when I make it for me I just use the 9 x 9 it reheats really nice. I don't know the numbers on this but it's wonderful . . sorry not a conventional receipe but you should get the jest of it.
