If you're an RNY'r, watch out for the jellied cranberry sauce and other juices.  There's quite a bit of sugar in them that could make you dump (they do me).  I make my cranberry sauce with 1 cup of Splenda and cook the cranberries down and then put them through a sieve to get just the sauce and let that chill and set up. 

I made a great chicken in the slow cooker yesterday.  It's very easy.

Put 1 whole chicken in slow cooker on high for 2 1/2 hours with 1/4 cup water (I use the slow cooker cooking bags so it doesn't stick). 

After 2 1/2 hours, add 1 1/2 cups tangerine or orange juice to the slow cooker (I juiced my own tangerines and added no sugar).  I put some salt & pepper on the chicken as well as a little tangerine zest on the skin.  Turn slow cooker to low and cook for 3 more hours OR right before chicken falls off the bone.

Take chicken out of slow cooker and put in a 350 oven for about 30 minutes to brown (you can skip this). 

Remove juices and throw away.  Put chicken back in slow cooker on warm until ready to serve.

You get a wonderful, flavorful chicken but no sugar backlash from the juices.  My husband was so sick of chicken because we eat so much of it but he really loved this and told me to make it again soon.

                        Mix Ahead Hot Cocoa Mix
 

                      1 ( 9.6 - ounce) box instant nonfat dry milk powder

                       1
1/4 cups Splenda granular
                        
                        2/3 cup powdered non-dairy coffee creamer 
                         ( you can use what ever flavor you like)

                        2/3 cup dutch process cocoa powder


                    combine ingredients in a bowl and stir well 
                    ( I whirl mine in my food processor )
                    
                    combine 1/4 cup hot cocoa mix with 3/4 cup water 
                     boiling water.
                    ( I have been using milk for the extra protein)
                     ( I have found it is better to use a pan to heat your 
                      milk or water, as opposed to the microwave.
                      It will clump if you use the microwave).


                      per serving: 70 calories  5 gr. of protein 1 fat
                      9 carbs, sugars 8

Here's a recipe I found online earlier this week - I've modified it a bit.  Took it to another Christmas party today and it was a hit.

Black Bean Salad

1 can black beans -- drained and rinsed
1 can corn (I used frozen/thawed corn)
2 tomatoes -- diced
2 green onions - sliced
1/2 green pepper (I had some green, red and orange peppers in the freezer I used) - diced
1 tsp minced garlic
1 tsp cumin (or more to taste)
salt & pepper

Mix all ingredients together.  It is yummy served right away, but much better if you let it sit for a couple hours in the fridge to let the flavors mingle.

NOTE:  I needed to make the recipe a little bit larger than this, so I added an extra can of black beans and it was the perfect size for a dish to pass.

Thanks Pam, I have made something similar before, its good bit for some reason I can't digest the corn.  I added chick peas instead.

If you have anything else, please send it.  After 5 years I still  have know idea what to eat!  I tend it eat the same stuff over and over.

Current Weight  =  168#  /  26.4 bmi  :  fluctuates 5# either way  @  5'7"  /  more than 90% EWL
Normal BMI (24.9)  =  159#:  would have to compromise my muscle mass to get here without plastics, so this is not a goal.

I agree.  By the time I shop for it, make it, and eat it -- the last thing I want to do is freeze it and see it again!  Shelly is also single, but I think her mother lives with her and she probably eats with her.  Depending on what it is, I can either eat all of it (like the tortilla pizzas) or have 2-4 leftovers.  So, not bad really.

I just got the pancake / waffle mix she recommends shipped to me today, so I am going to try the 5 minute cake adaptation she has created with it.  I don't do complicated when it comes to cooking, and her recipes are great where that is concerned.  I also have a sweet tooth, and she has lots of good ideas / recipes for that!  Plus, the good comfort food.  Anyway, I hope you find things you like there!
