"Birthday Cake" ideas

My husband had just been diagnosed as a diabetic.  Monday is his birthday and he wants cake.  Any one have any ideas? 

I thought about the low sugar cake mixes, but they seem to be hard to find.  Frosting is easy,  he is a huge fan of cool whip, thought I would mix in a package of SF pudding to make it  a little firmer. 

Any ideas would be great.

PS he can't do much fruit, he is allergic to strawberries, melons and citrus.

HI Pam!!!

I made this a few times and people seem to like it.  I am also a type one diabetic and I love it.  You could substittute somethings umm like the strawberries LOL:

Sugar Free Angel Lush Cake


I tried this recipe from www.jello.com
I changed up the ingredients and OMG . This has to be the dreamiest dessert ever. I did use SF Angel Food Cake as well , so I am not sure what the nutritional value is now . I can tell you that making it sugar free probably saved us at least 60 % of the calories.

The only sugar would be the natural sugar from the pineapple .
This is a great summer treat !


1 pkg. (4-serving size) SUGAR FREE JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1 can (20 oz.) DOLE Crushed Pineapple in Juice, undrained ( Sweetened with Splenda )
1 cup thawed COOL WHIP Whipped Topping ( Lite - SF )
1 prepared round angel food cake (10 oz.) SF if you can find it .
10 fresh strawberries



MIX dry pudding mix and pineapple in medium bowl. Gently stir in whipped topping.
CUT cake horizontally into three layers. Place bottom cake layer on serving plate; top with one-third of the pudding mixture. Repeat layers two times.
REFRIGERATE at least 1 hour. Top with strawberries just before serving. Store leftovers in refrigerator

I have done this work work, but he hates pinappel.  I wonder if I could do peaches and chop them up.  Its an idea.

mmmmm peaches maybe some coconut too for texture.  i also saw s/f cheesecake pudding i thought would be most delish in there.

You could make him a sugar free cheesecake.  I follow the Philadelphia recipe but use 1.5 times as much splenda insead of sugar.  Also, I make a crushed nut crust or use no crust at all.  It's pretty tasty and you could still put candles on it.

You could make these cupcakes......easier to control the portions!

We found the low sugar cake mix.  I found some sugar free mousse that I am going to fill them with, and top with some cool whip mixed with sf vanilla pudding.   We are going to go the cupcake route, and I am going to freeze all the extra cupcakes but 6.  That way we have portion control and not alot of left overs.

Jon made some concoction for super club at my house last year.
He used sugar free angel food cake, s/f chocolate pudding, s/f cherry pie filling and s/f cool whip.
It was a hit. He mixed it up like a truffle?
Is that a word?
I also brought some s/f cake to his house from Meijers. It's hill and valley brand. Pretty good stuff.

Diet soda cake

 

10 oz. of diet soda (any flavor to match cake mix)
1 egg
cake mix  (any flavor)


Bake at 350 for about 25 min.

 

Some ideas I have:

 

White with diet sprite

Chocolate with diet cream soda

Carrot or spice with diet root beer

Yellow with diet Sunkist

FAT FREE FROSTING

1pkg. of ff/sugar free instant pudding, any flavor
1 1/2 cups cold skim milk
1 envelope of Dream Whip topping mix

Beat milk, whipped topping mix and pudding on low til blended and then on high for 4-6 minutes or until soft peaks form. Makes 3 cups..enough to frost a 13x9 cake. Refridgerate.
