I heard my name , Canned beets are cooked beets, so cook them if you are using fresh Beets
Good morning all! I'm still on London time, so it's actually afternoon for me, mentally, which is why I've been awake since 3:30. Yuck.
So I'm playing the vegetable until I leave for the soggy Buick Open. If anyone is going to be out there this afternoon, stop by the hospitality suites at the 17th hole and say HI! I'll be manning one of them. Scotland and London were fantastic, but it's back to reality. It was my first international flight since my surgery 2 years ago, and it was really nice to have ROOM in my seat.

Good for you girl, Scotland and London are two great places to be ( been there twice). the Buick Open is always awesome too, been several times and your right, I always got soaked. My friend that I would go with, always called me before hand and asked me what I was wearing and what shoes I was wearing. I would always laugh and tell her " The same ones I ruined last year" We always had a great time though. Have fun!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Cooking fresh beets.....
Make sure they are washed thoroughly, cut off the green tops to about 2 inches from the beet. Cook as you would potatoes, i.e. in a pot, just covered with water until they are just tender when poked with a fork. Now comes the messy part..... when they are fork tender, drain and put in the sink with cool water. Use gloves if you don't want your hands stained, and the skins and rest of the tops will just slide off easily...you may have to use a paring knife to get the little root end off. I usually make pickled beets
and you can get lots of recipes off the web.....just put in beets and go!
I never measure the ingredients for pickled beets, I usually just taste the liquid to make sure it tastes ok....
but the pickling juice consists of vinegar (cider type), sugar or splenda, water, salt, and a little cinnamon.
As I said I don't have the exact measurements, but I'm sure you can find a recipe on the web.
Beets are a good healthy veg to eat. Good Luck!

Scrub those beets up and rub them with a little olive oil and seasonings of your choice, wrap them in foil and throw them in the oven or on the grill until tender. They are YUMMMMMMMMMMMMM. If they are super sized ones cut them in halfs or quarters.
