I just found this recipe and thought others would enjoy it as well. 2 Cups water 1 Pkg (6 oz) Portabello Mushroom caps, cleaned 10 fresh Bail leaves, chopped 1 clove garlic, crushed and diced 2 tsp. olive oil 8 Oz shredded or sliced mozzarella cheese, divided 1 tomato, thinly slice Place mushrooms in shallow steamer, rounded caps down (place a small amout of water in botton so they can be steamed. Combine chopped Basil leaves, dices garlic, and olive oil; brush mixture onto undersides of mushroom caps. Cover. Microwave on high for 5 - 7 minutes, until mushrooms are beginning to cook. Layer each mushroom cap with cheese, a tomato slice, and then top with cheese. Cover. Microwave on High for additional 2 to 3 minutes, until cheese is melted and muchrooms are hot. This could easily be prepared in stove top steamer, and baked for the final stage in the oven. Hope you all enjoy!
