Looking For Some Ideas
Hi Jill,
Do you have to eat "breakfast foods" at breakfast or are you ok with eating "lunch/dinner foods"? You can really branch out if you skip the whole eggs and bacon mind set. I don't know what stage you are at for foods allowed but here are some ideas for when you can venture out from the soft only protein diet.
Some things I eat at breakfast:
Mexican omlet- 1 whole egg OR 2 egg whites (1/4c egg product), a tablespoon of salsa, ham and cheese to taste.
Steak and egg- 1 whole egg OR 2 egg whites (1/4 egg product), 3oz or so of a sirloin steak or use hamburger or ground chicken/turkey/pork. Spice up the meat with garlic powder and Worcestershire sauce or whatever you like.
Crunchy yogurt and fruit- 1-2 tablespoons dry low sugar cereal (kix, cheerios etc), 1-2 tablespoons fruit (strawberries, banana etc), and any flavor yogurt (about 1/2 of a 6oz container).
of course often I will have carrot/cucumber sticks with ranch dip (made with plain yogurt and Hidden Valley Ranch powder. I LOVE RANCH
If you don't have to have a breakfasty food try....
minestrone soup
homemade beef stew
tuna salad on crackers
salad (greens, cottage cheese or beans and veggies)
chili with cheese etc
hamburger/turkey with tomato or other toppings you enjoy
ham and cheese on crackers or just on lettuce leaves
homemade lowfat quiche
slow cooked pot roast slices with veggies
There are some good places to find recipes online...BHG.com, allrecipies.com etc. Any recipe could be alterered so don't worry about sticking to anything in writing especially with things like oil, sugar and all the rest. I don't think I ever make anything by a recipe. I also use my crockpot more often than not and have several recipes for that, which I have either made up or adapted so just let me know if you want some. I guess I should go...hubby needs to write a paper for college...
Good luck.
