Mexican Meatloaf

Mexican Meatloaf

Ingredients

1 spray(s) cooking spray
1/2 pound(s) raw extra lean ground beef
1/2 pound(s) lean ground turkey, breast
2 large egg white(s)
2 oz cornbread stuffing dry mix, (about 1 cup)
1 medium onion(s), chopped
1/2 tsp chili powder
1/4 tsp ground cumin
4 oz canned green chili peppers, diced
8 oz canned enchilada sauce

Instructions
Preheat oven to 375°F. Coat a broiler pan with cooking spray.

Sounds good to me, but I'm sure no one else here would eat it!  Sux to be me sometimes!  lol

YOUR FAMILY WON'T EVEN EAT MEATLOAF?  OMG... it was sooo good.  I just found a recipe for Mexican Lazagna, i'm going to make tomorrow night.  does your family like mexican food?  salsa, chips? taco's??

They'll eat meatloaf, but only made a "certain" way!  They are SOOOO picky!  DH will eat taco's but only with meat and cheese.  No lettuce or anything, no salsa!  PICKY PICKY PICKY!!!!!!!!!  Drives me nuts at times!!!!!!!!!!!

Oh sounds YUMMY!!  I will try this one!! Maybe do all turkey to lower the fat?

I did lean hamb and ground turkey, it might be dry with just turkey, but with my DH he's just now eating the turkey so its baby steps. hehe

Sounds yummy, so does the lasagna but my DH won't eat meatloaf either.  But I could make mini ones and freeze them for mysefl!

I always make meatloaf in muffin tins to help with serving sizes and to freeze indiv. meals for later.  I'm going to try this one!

Thank you for posting this recipe.  I am adding it to my recipe file for after surgery, when I am back on solid food.  I am drooling right now from just reading the recipe, since I haven't had anything but liquids for 12 days.
