cauliflower salad

first of all, you need to understand my DH is a "FREAK" about his potatoe salad, I am known for it, people have actually named it after me.  well, I made the cauliflower one today for the second time and he just told me "IT is delish, and ALMOST as good as the REAL one"  now whow,  what a compliment...  he is really doing well with new stuff.

I'm so happy that your DH is willing to try new things like that!  I can't even get DH to eat mayo or potato salad...........cauliflower............NEVER!!!!!!!!!!!

So DH gives it his OK, it must be good!  Inquiring tummies want to know.......... tempt us..... can we have the recipe?....... pretty please?  with splenda on top??

I"m sure everyone one's potato salad is different, mine is pretty simple.  I cooked the cauliflower till tender, yet not musshy, drain well,  add mayo, chopped boilled eggs, salt pepper, fresh chopped Parsley, and mayo.  refrig, 

you can mash them also (Mock mashed pot) BUT they get musshy/watery, so the trick is to add a tablespoon of instant pot. as needed to thicken them up.

Does he like caulfilower just cooked?  Me and my DH don't but I think I should give this a try.  I know on the RNY board many put it through a ricer to and make mock rice out of it as well as the mashed potato.  Thanks for the recipe!
