What's for Dinner-Thursday

wow, this place is hoppin this week, must be cooler weather.  My DH has tomorrow off, and we're taking out the boat.  BOoooHOoooo !!!  here are my plans for Dinner tomorrow night, I have to make something easy cause I've got a neighborhood jewelry party. 

Whole Wheat BLT Roll Up (with Turkey bacon and mustard)
Radish Salad (recipe below)

Ingredients:

  • 4 cups radishes, washed and sliced
  • 1/2 cup thinly sliced onion
  • 1 cup diced fresh tomato
  • 1 1/4 teaspoons salt
  • 1 small clove garlic, minced
  • 1/8 teaspoon pepper
  • 1 teaspoon finely chopped fresh basil or fresh mint
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • fresh chopped parsley for garnish

Preparation:

Combine sliced radishes, onion, and tomato. Whisk together the salt, garlic, pepper, basil or mint, lemon juice, and vegetable oil. Toss with salad then garnish with parsley.
Serves 6.

DH and kids will have pizza as it's Scout night and they have to be out of the house early.  I'll probably have a "doctored" up South Beach Pizza with extra protein on it.

I had leftover chicken noodle soup that I made the other day for DH who is sick.  Now so am I.  Then I ate everything else that wasn't nailed down! LOL  Must have been because I was coming down with this cold.


20 pounds lost during two week pre-op diet.
