Chicken Spring Roll- wonderful hot weather meal
1 rice paper wrapper- 8"
2 oz roasted chicken cut in strips
cabbage or lettuce cut in strips ( try conical cabbage- yum!)
2 carrots cut in jullienne strips
2 cucumber julienne strips
1 T toasted peanuts chopped
1 T sweet chili sauce

soak rice paper wrapper in warm water 10-15 seconds.
Place on place. Arrange chicken and veggies, Roll up tightly like a burrito/ spring roll
Dip into sweet chili sauce and peanuts ( if desired)
Perfect hot weather, cold meal.
