Brocolli Casserole
I found this recipe on line and adjusted it a little, i'm sure you could adjust it more for your liking.
BROCCOLI & CHEESE CASSEROLE
1 10 3/4 oz. can Cream of Mushroom Soup (reduced fat)
1 medium onion, diced
1 c med. sharp Cheddar cheese, grated (reduced fat)
2 eggs
salt and pepper, to taste

2 lbs. frozen broccoli, thawed
1 10 3/4 oz. can Cream of Mushroom Soup (reduced fat)
1 medium onion, diced
1 c med. sharp Cheddar cheese, grated (reduced fat)
2 eggs
salt and pepper, to taste
Combine all ingredients in a large bowl. Mix well. Spoon into 13x9 inch pan. Cover with foil and bake at 350°F for 50 minutes.
Let sit for 10 minutes before serving.
