Rainy Friday.........Whatchya got on your plate today?
ENOUGH with the RAIN already! I'm getting moldy behind the ears! haha! Hope we see some SUNSHINE sometime this weekend!
So..........what's everyone eating today? Anyone else a creature of habit like me (with their food)???
B: 2c FF milk, eggface's pizza bites
S: 2 small carbquick pancakes and 1 mini carbquick muffin
L: fage with blueberries, splenda, and HiLo cereal
S: beef jerky (I was out of strawberries! BUMMER!!)
D: scallop/veggie stir fry
S: only 8 and some light pringles potato chips (It IS a rainy Friday after all!!!!!)
Vitamins are done, I've got 64oz of water in me, and I spent 1.5 hours at the gym!

Which recipe do you use for the carbquick muffins and pancakes? I bought some but haven't tried it yet. I left the house today with no lunch so my day was not very good protein wise. But here it goes.
B: 2 cups milk (16g)
L: 1/2 oz almonds (4g) and 1/2 oz pistachio crisps (2g) and 100 cal protein bar (6g)
S: 4 strawberries
D: 3-4 oz shrimp (when I get a chance to cook it) (21 - 28g)

Carbquik blueberry muffins (from the net)
2 cups carbquik
2/3c half and half (I used ff milk instead..it's all I had)
1/3c splenda
2 tbs vegetable oil (I used sf applesauce)
1 whole egg, beaten (I used egg beaters)
3/4c blueberries, thawed, drained (I used sugar free chocolate chips instead)
-Heat oven to 400deg F
-Place paper baking cup in each of 12 reg sized muffin cups or grease bottoms of muffin cups
-stir all ingredients except blueberries until moistened
-gently stir in blueberries
-divide batter evenly among cups
-bake 13-18 minutes or until golden brown
I actually made mine as mini-muffins to make the stats look better..haha This is how mine came out for each muffin
Not a bunch of protein, but they taste pretty good! (Even with all the changes I made to them!)

1c. carbquik
1/3c skim milk
2 egg whites
1 tbsp canola oil or 1/2 a NSA applesauce cup
2 tbsp splenda
2tbsp sf syrup (I used vanilla)
1/2c fruit...your choice (I used blueberries)
-mix carbquik, milk, egg whites, oil or applesauce, splenda and sf syrup
-mix in your fruit
-cook as you would any other pancake
I got about 10 pancakes from this recipe.......each one is about 35 to 40 cals with 3g of protein. You could probably add some protein powder to them to increase the protein but it would also increase the calorie count.........up to you!

Still pre-op, but working on healthy eating! It's funny, I'd forgotten how good some berries and a dab of Cool Whip Free can taste! No chocolate for me! :D
