Spaghetti (Squash) Pie

1 spaghetti squash
2 large eggs
1 15 oz container part-skim ricotta cheese
3/4 cup plus 2 tblsp grated parmesan cheese
1 cup marinara sauce
1/2 cup low-fat mozzarella cheese
Pierce squash in several places, cook whole in microwave 10-12 minues - until tender. Cool slightly before opening; discard seeds - pull pulp out and blot on paper towels.
Preheat oven to 350 degrees; grease 9-inch pie plate.
In large bowl with fork beat eggs. Stir in ricotta and 3/4 cup parmesan cheese until blended. Add spaghetti squash to cheese mixture and stir until well coated; transfer to pie plate. Top with marinara sauce, sprinkle mozzeralla cheese and 2 tblsp parmesan cheese.
Bake for 25-30 minutes. Remove from oven and let stand for 10 minutes before serving.
