Donut Muffins (inspiration thanks to Eggface)

Donut Muffins

1 egg, beaten
1/2 cup milk
2 tablespoon vegetable oil
3/4 cup Splenda
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon butter flavoring
1 cup almond flour
1/2 whole wheat flour
1/2 cup unflavored protein powder

Preheat oven to 325 degrees

Mix all ingredients together. Spray mini muffin pan with non stick cooking spray and fill cups. Bake 8-12 until toothpick inserted in center comes out clean.

mix about 1/4 cup Splenda and 1 teaspoon cinnamon in large ziploc bag - add muffins still warm from the pan and shake to coat.

Very tasty, hehe... if I do say so myself - thanks again to Eggface who inspires me to try adapting foods to a healthier version!!!!!

This is the protein powder I am now using - it's unflavored and bakes well without toughening up foods - I think credit goes to MainePam for recommending it a few months ago.

Do those come out like "plain" doughnuts or muffins?? I have some of that protein in my cupboard, that I have been thinking about using in something.

Like a muffin....that tastes like a plain donut covered in cinnamon sugar. It's based on an old muffin recipe actually called donut muffins that I would make pre-WLS.....using lotsa real butter.

I made the chocolate glazed donuts the other day and they are very good, a little dry but still very good.

I found them to be dry too - but the flavor was good, easy enough to solve the dryness - I would add 1/4 cup pumpkin.
