Chicken Taco Soup

Saw this on the Main Board...

Chicken Taco Soup (also made with ground beef)

1 1/2 lbs. chicken
1 med. onion
2 taco seasoning packets
2 large cans diced tomatoes
1 large can stewed tomatoes
1 can whole kernal corn
1 can black beans
1 can light red kidney beans
1 can pinto beans
2 cans chicken broth
salt and pepper to taste

boil or buy two rotisserie chickens from store...debone chicken...sautee onions in two tablespoons of olive oil until soft...add chicken, broth, seasoning....stir...then add the rest of the ingredients...beans and corn must be drained...if you find you don't have enough broth to  your soup then add more chicken broth (no****er)....heat and stir for about 45 minutes. 

This soup is awesome with shredded cheese and 0% Greek yogurt on top of it!!!

Sounds pretty good...except for the corn!  I LOVE corn but figured out today that it's the ENEMY!!  (I had a little bit of fresh corn with supper last night and I've been "paying" for it all day today!  YIKES!)
