You gotta try this:   2oz of frozen scallops (you could use chicken or whatever protein you like), 1 c of frozen veggies (I used an asian type blend that had broccoli, carrots, onions, red peppers, water chestnuts  the 1 cup cooks down to look like about 1/2 c) ...cook it all up together (I just used a frying pan with some Pam in the bottom) ...THEN!!!!!!!!    I added about 2 tbsp of fresh salsa!!!!  OMG!  I'm in heaven!  It tastes soooo good!   Gotta be able to handle a little bit of spicy stuff tho!  And VERY easy to throw together....I'm all about easy meals!!!!!!!!    so.....protein 24g, cals about 100, carbs 9 grams, 2 gr of sugar, .5 gr of fat!!!!  WOOHOO!  The spicier the salsa...the better as far as I'm concerned!  I'm finally satisfying that tomato craving!!!!!!!!!  hehehe

Wow, that sounds really good!!!  I'm gonna make it tonight for supper. I have everything here at home too. Those big sea scallops were on sale at Shaws so I bought just one big one. I think I'll cut it in 1/4's and use it.

Thanks for the idea,

Cheryl

Sounds yummy I need to get better about eating veggies. I have been eating my fruit a little though.

Oh that sounds like what I had for dinner tonight minus the veggies.  I need to do better with the veggies but since I'm trying to add calories I used cheddar cheese instead of the veggies.  Wow was it good.  I have not considered using scallops but ya know what I'm getting this week at the grocery store...YUP scallops.  Can't wait to try it!
