Another New Recipe
Has anyone tried Eggface's Turkey Slaw???
I made it and it is absolutely WONDERFUL!!! I made it minus the turkey but will use turkey next time. I'm having a really good time trying new recipes out ~ as you can tell I especially like www.theworldaccordingtoeggface.com
I'm heading to do groceries so I'll be making some from my new Hungry-Girl cookbook this weekend. I may not be able to eat a lot of food but I sure am having fun cooking. Good thing I have a family with a healthy appitite and a good size chest freezer.
1 cup smoked turkey breast, diced
1 cup Broccoli Slaw Mix
1 cup Cabbage Slaw Mix
1/2 cup cheddar cheese, shredded (I used WW mexican blend)
1/4 small red onion, finely diced (I didn't use one)
1/4 cup raisins
1/4 cup slivered almonds, toasted
1/4 cup reduced fat/light mayo
1/4 cup Greek Yogurt
1 tbsp BBQ Sauce
1 tbsp cidar vinegar
1/2 tsp Kosher Salt
black pepper to taste
Toast almonds in a dry pan for a few minutes. Set aside to cool and crisp up.
In a large bowl comine turkey (I got 2 1/4" thick slices from the deli then diced), slaw mixes, onion (I didn't use one), cheese, raisins and almonds. In a small bowl mix mayo, yogurt, BBQ sauce, and vinegar. Pour dressing over the slaw mixture, season with pepper adn toss to coat. Cover and refrigerate 1 hour then serve.
Makes 4 1/2 cup servings
