So, I have been on a quest over the past 3 weeks since I started on "solid" foods to find some yummy low-carb recipes. On the mushy stage I discovered a very yummy crustless quiche using cheese and cream of spinach. So I decided that I would try and make a "taco quiche"...mmm, it was yummy! I'd definitely recommend it and I think its got plenty of protein in it. Here's what I did.
Brown desired amount of ground turkey (or burger).
Add in diced onions and brown.
Add taco seasoning and 1/4 cup water and simmer.
Add 2 tablespoons of light sour cream.
Add 1 tablespoon of flour and stir well.
In separate bowl combine 4-6 eggs (depending on amount of meat), 1/4 cup lowfat milk, part-skim cheddar or mexican cheese, salt/pepper to taste, onion powder/garlic powder to taste, one tablespoon melted butter or margarine, beat well.
Spray baking dish lightly with cooking spray, add meat mixture.
Pour in egg mixture over the meat.
Bake @ 350 for 30 minutes or until brown on top.
I liked this a lot and you don't even realize you're not getting in carbs because of all of the flavors.
