kate...how are you doing on the liquids? I know it's rough, but you can do it! You are stronger than you know! honking for you still!!!!!!!!!
Cheryl....We're going to my mom and dad's for lunch with the whole gang (15 of us in all!!) Mom loves cooking for crowds! Not sure what we are having, but it's usually ham! (Old French wives tale about getting "La Galle" if you don't eat ham at Easter!) I'm not taking any chances and will have a few bites! I'll be diggin the veggies mostly though!

Yummy, that sounds sooooo good right about now lol!! And, since ya asked, may I vent a bit? LOL!! I've been visiting up here in Canada and my friend Sandy just moved into a place with less expensive rent two weeks ago. (Lucky me got to help her move lol!) The thing is, the place is nice and it IS cheaper (which is great because we've both had some financial issues) BUT--it has NO FRIDGE AND STOVE so we've had to go out to eat every day for lunch before she heads off to work and then we get a little frozen dinner for each of us for supper and I heat mine in the microwave which she DOES have thankfully!
I've always been fairly resourceful so I've been researching ways to help her out. I remembered the other day that a while back I'd heard about this website called www.modestneeds.org (in case anyone else is ever in need of help folks might want to write it down) and I had Sandy write to them. She posted an application entitled "Refrigerator and Stove" and how it works is, they request documentation (if it gets even that far--some requests are refused immediately if it doesn't fit their mission statement) and then the person submits the documents proving their situation, then it goes to prequalified status and is posted for donor review where both corporate sponsors and individuals who wish to help others can go and donate. Each request for help is assigned a point value and once enough donations are received to fulfill the request it is funded and a check is sent to the store. Fortunately, Sandy told them she's fine with reconditioned (used) appliances so that will hopefully help her situation. But anyway, I got off on a tangent lol! The point I was trying to make is, your menu sounds wonderful! We aren't doing too much for Easter thus far. Sandy's kids offered to come visit (they are now 18, 20 and soon to be 23) but she's not in a position to entertain so we will most likely have a quiet day. Might go to a sunrise church service (despite the fact that I am SOOOOO NOT a morning person lol!!) and then an Easter breakfast but haven't firmed up anything yet. That's my story and I'm stickin to it lol!!! Hope your Easter is blessed! Hugs, Lori
