Pizza Chicken
1 ½ lbs Chicken breast halves (boneless, skinless)
1 cup freshly grated parmesan cheese
½ teaspoon crushed dried Italian herb seasoning
¼ teaspoon black pepper
2 large eggs beaten with 1 tablespoon water
2 tablespoons olive oil
1 28 oz can crushed tomatoes or pizza sauce
½ cup chopped pepperoni
½ cup shredded mozzarella cheese
Rinse chicken and pat dry.
Place the parmesan cheese on a large plate and mix with Italian seasoning and pepper.
Dip each piece of chicken in beaten egg mixture, then
in cheese mixture coat all sides.
Set aside til all pieces are coated ( I did grate more cheese to coat the full 1 ½.lbs, probably extra ½ c)
Heat Olive oil in non stick skillet. Add chicken pieces
and saute til golden brown on both sides, about 8 minutes. Transfer chicken to 3 ½ quart or larger crock pot, slow cooker. Cover chicken with sauce (I used Italian crushed tomaotes) then sprinkle pepperoni over the top of the chicken pieces.
Cover and cook on low 5-6 hours,(2 ½-3 on high)
Sprinkle cheese on top, cover and cook 5-10 more minutes.
