Peanut Butter Cookies
I made Peanut Butter Cookies tonight!!! They are SOOO good so I thought I would share the recipe:
1 cup peanut butter
1 cup splenda
1 tbsp vanilla
1 egg
Mix together and roll into walnut size balls. Flatten with a fork dipped in splenda or sugar. Bake at 350 for 12 minutes. **Don't overbake as they will fall apart. Cool on cookie sheet before removing. YUMMY!!!

I'm sure she meant excessive fat since no doubt there are calories in it as well....just not as many.
I've never used splenda although I have eaten something that someone else made with it.
It's so expensive I've just never wanted to shell out the dollars.
Is there anything special I should know before I begin using Splenda?

I have used splenda in place of sugar in everything for a few years now. I literally use it exactly like I would sugar cup for cup. I put it in my coffee, in oatmeal, to cook with---everything.
Also I found that it is much cheaper to buy at BJs (if you guys have one near you). You get 2 big bags for like 9 bucks and it is like 7 for 1 at walmart. I got the 2 pack of bags and have not had to buy any for a long time.
I agree splenda is expensive, but it is one of the only sugar substitutes you can cook with, the others, either loose their taste or change the taste to bitter. HOwever if you bake as often as I do the bag of spenda lasts forever. you can always go 1/2 with a friend. I'm going to try them cookies, maybe even today. if I can get off my butt, I just sat down and after an hour walk today, and groceries, my calfs and ankles are killing me.
