Low Fat/Sugar Free Pumpkin Muffins

Here is a WLS friendly recipe for pumpkin muffins.  Enjoy!

PUMPKIN MUFFINS (Sugar Free/Low Fat)

  

1 cup Splenda

1/3 cup applesauce

3 tbs vegetable oil

2 eggs

1 cup pumpkin (canned)

1-1/2 cups of whole wheat flour

½ tsp baking powder

1 tsp baking soda

1/3 cups water

½ cup chopped pecans or raisins

1 ½ tsp pumpkin pie spice

 

Cream together oil, applesauce and Splenda.  Add beaten eggs, pumpkin and water.  Mix well.  Sift together flour and other dry ingredients.  Add gradually to pumpkin mixture, blending well after each addition.  Stir in raisins or nuts.  Pour into muffin tins about 2/3 full.  Bake at 350 for 20-25 minutes.

I love muffins. Going to have my daughter make some later this week when I can enjoy them. I am on a clear liquid diet until Tuesday.
