Chocolate/Peanut Butter Baked Ricotta
If you've been listening to my recent whines, I've gone off sweet carbs and those blasted Reese's pb eggs have been taunting me!! So.....last weekend, I threw together some ingredients until I came up with something that will at least give me the same flavors - but sugar free and high in protein!
32 oz. part skim ricotta cheese
4 eggs
1 cup unsweetened cocoa powder
1-1/2 cup granulated Splenda
1 cup peanut butter (I use Simply Jiff)
1/8 teaspoon salt
Mix everything together well and pour into greased pie plate; bake at 350 degrees for 40-60 minutes or until set.
Serve with Splenda sweetened whipped cream!
