What's on the dinner menu tonight?

What is everyone planning for dinner this evening?  I am in a "don't know what to cook" mood today.  Looking for some ideas.  Thanks!

Well, a friend of my Dad's gave us a TON of frozen tilapia - each fillet individually frozen, and since it's Ash Wednesday, it'll be tilapia broiled with olive oil and Old Bay and garlic green beans.

Tonight, I'm also experimenting with a recipe for "Breakfast Cheesecake Cups;" I'll let you know how they turn out.

Anything with cheesecake can't be WLS approved, can it?  If so, I'd love to have one.

It's actually 1% cottage cheese, l/f cream cheese, Splenda, eggs and extracts mixed and baked in a water bath.

Tonight will be omlets for me - and shepherd's pie for Lee...  Normally I eat the pie without many of the potatoes - but tonight is Ash Wednesday, so I will behave and leave the meat alone... I can't promise to survive lent this year without screwing up a Friday, but at least for today I am on par to behave! :)  Watching my protein is harder without meat than I would have ever imagined - thank goodness for Egg Beaters!!!

What have you come up with for tonight?  I will be waiting to hear! :)

tonight is carry out.  Bri can't have cake for his birthday... (not that he wants it) but he loves Falafel and feta and tomato salad so we will get carry out from Al Pacinos which is a fave place of ours...


now last night I made something we all MOOSE MEAT...

brown a pound of ground beef
add Worcestershire sauce to taste (we use a lot)
add a package of onion soup mix
add some chopped green peppers and onions (use frozen it's fast and easy)

add about a cup of ho****er

cook till the water is gone

add yellow mustard   (I squeeze on a couple of ribbons)

mix well


ta-da  MOOSE meat.   the name has NOTHING to do with the food product.

it's yummy

it's fast
it's easy
it reheats well.

Now the moose meat sounds like my kind of dinner.  Tasty, quick & easy.  I will put that one in the recipe file.

I'd like to put something on the grill (salmon or tuna) ... just called my son and told him to shovel a path to the grill which is on our deck which is covered in two feet of snow like everyone else.  But I will report later on what we actually end up having because I have a feeling getting to the grill might be harder than I think.

Okay.  So we grilled salmon on the grill and steamed some veggies.  Tomorrow is another day.
