i am so trying hard not to go buy junk food for the storm and the superbowl.  I'm trying be good.  I think I just need to start ordering groceries.  I have food shopping issues. 

I should allow myself one "goody" for the snowed in weekend.  What will it be...hmmmm?

I, too, have food shopping issues, but it's changed a bit.  For instance, today I bought shrimp, feta, cucumbers and tomatoes - I'll saute the shrimp in olive oil and Greek seasoning, and toss everything with Greek dressing and chill. 

I also bought some ricotta cheese and whipped cream - I'm going to make a baked ricotta and serve it with blueberries and whipped cream.

You just have to think outside the box and get creative.  I promise, it'll come naturally after a while.

I hope so... the darn band is so challenging with junk food!  Maybe I will go get some crab and make some crab cakes and pumpkin whip from bariatric eating.  I'm not big on leftovers more than 1x or 2x so I am finding cooking challenging post WLS cooking for 1 person .  I have a huge thing of chili that I froze and could never eat it again and it would be too soon :(

I actually had to go to the store today for TP because my daughter used the last & didnt tell me we were out! I was lucky though, the store I went in had sooooo many packs of TP it was off the shelves & stacked up on the floor! I guess they are anticipating a sell out of TP! It made me laugh though!
Can you post  that baked ricotta recipe.....I seem to have lost it!

My brother's kids seem to EAT TP, so I made sure they had some last weekend!!!  LOL!!!

Baked ricotta -

1 large container of part skim ricotta - 32 oz.
4 eggs
Splenda - start with 1/2 cup and increase to your liking
2 tsp. of extract - I've done vanilla, almond, lemon and orange - just use your imagination

Mix well - you can mix by hand or with mixer.

Pour into pie pan sprayed with non-stick cooking spray and bake at 350 for about 40 minutes or until set.

Sad, huh?  The great thing about TJ's, though, is that they usually will ring the bell to get more lines open - my TJ's does that, anyway.

Gas stations are no better.  I stopped at Royal Farm to pick up something on my lunch break, couldn't even get into the parking lot because of the lines at the pump!

I guess I lucked out.  I went to the grocery store a couple of hours ago and it was busy but not too bad.  And fully stocked on everything.  Fortunately I'd done my big shop on Monday, so I was in and out within 15 minutes or so.

Batten down the hatches!!!
