I made the Protien Banana Nut Muffins Last night (yes I made them as muffins not bread)

AND EVERYONE LOVES THEM!

I found a decent breakfast now for my hubby and kid!

Bless you!

tell Mike I am going to work on the brownies... I think I'm going to add more eggs and reduce the baking powder to get them more like the muffins.

here is the banana bread recipe:   (I made muffins instead)

3  Large ripe bananas, smashed

1   Cup Splenda (reduced the splenda to 3/4 and added sf vanilla syrup)

1 Tablespoon banana extract (used Vanilla extract)

3  Large eggs

4.5  Scoops Vanilla Body Fortress Protein powder

5  Tablespoons "I Can't Believe It's Not Butter"

2  Teaspoons baking powder (reduced to 1.5 tsp)

1/2  Teaspoon baking soda

1/4  Cup finely chopped walnuts

Salt

Cinnamon

Mix the sugar, margarine, bananas, and eggs for 3 minutes. Sift protein powder, baking powder, baking soda, salt in a separate bowl. Add dry mixture to the wet.  Mix well.

Grease a glass baking dish.  Pour the batter into the dish and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

I like to dust the top with cinnamon/Splenda before cooking for a nice glossy brown crustiness.

ok Baking powder makes stuff RISE...  baking soda  is more salty...   THEY ARE NOT interchangable.

you need both.

measure out with a level MEASURING SPOON (not a regular table or teaspoon)

scoop it up then run a knife across the top to make it FLAT...

add it to the dry ingredients and mix mix mix with a fork till it's all well blended  (it's dry so it's like playing with dirt)....

Nessa,

You're welcome.  I'm glad everyone enjoyed the recipe.  Hey, I may just try muffins too.  Sounds like a winner!

I have GNC banana protein powder at home.  Any suggestions as to how I can use that instead of the vanilla protein powder?
