I so need to stay away from bad carbs, so I'm really going to try to get on the ball here.  Actually, my biggest problem is avoiding them on the weekends!!

Friday:

B - Protein coffee
     Greek yogurt with granola

L - Turkey bites of turkey burger on bun, then 3/4 of turkey burger sans bun
     4 French fries

D - Pot roast
      veggies

S - 3 maple cream cookies

Today:

B - Protein coffee
      Greek yogurt with granola

L - Tuna salad with Triscuits

D - ? (Out)

All my fluids, all my vits!

B - Egg beater and some cheddar in a low carb torilla

L - tuna salad

D - Crock pot mexican chicken

Hey Laura!

I know Bernice is swamped between work and school, so she might not see this right away.  I'll email her and tell her you're asking.

I do my own version - chicken breasts in the crockpot with a jar or two of salsa, cook on high until the meat falls apart, then take the chicken out, stir in some sour cream (I actually use Greek yogurt), and return the chicken until everything's heated through.

Thanks Tia - do you use boneless/skinless chicken breasts or with bone? Sounds yummy!

I've used it with both boneless breasts and boneless thighs.  Never tried it with bone-in chicken, but the only difference is you'd have to fish out the bones from the crockpot.

I've also done it like this and added a can of rinsed/drained black beans and then topped it with sharp cheese.

I have a variation of it too

I use:
1 jar salsa
1 can reduced fat cream of mushroom soup
1 packet taco seasoning.
1 cup sour cream (or greek yogurt)

Put around 2 lbs chicken in crock pot. Sprinkle Taco Seasoning on Meat. Mix together salsa and cream of mushroom and then place on top the chicken. Cook on low 4-6 hours. When done, mix with the cup sour cream. YUM YUM it is good!!

Hey girly!  The recipe is listed on my blog - I'm Being Bypassed.  I just thre things together last night, but it came out so good!  We served it with shredded low fat cheddar, fresh avacado and a smidgen of greek yogurt.
