THURSDAY'S FEED BAG

Yesterday:
B - Protein Chai Latte
L - Chicken/Pork Fried TVP
S - greek yogurt/apple protein shake
D - meatloaf, green beans, mashed taters
S - 3 lorna doone cookies
80 oz. fluids, 117g protein, all my vits
Today:
B - Protein Chai Latte
S - protein bar
L - meatloaf leftovers
S - protein shake
D - chicken enchilada bake

Sure, although I don't have a real recipe, I just kind of throw things in.
Diced chicken breast
black beans
salsa
shredded mexican cheese (2% cheese)
greek yogurt (fat free)
enchilada sauce
corn tortillas
Dice the chicken and cook it in a bit of olive oil in a skillet. After the chicken has cooked through, I add the black beans, salsa, greek yogurt and some cheese - coo****il warmed through. In the bottom of a baking dish I spread a small amount of the enchilada sauce just to coat the pan. Then I place a layer of corn tortillas. I spread a layer of the chicken/bean/etc layer on the tortillas. I sprinkly a light layer of the shredded cheese on top and then pour a light layer of enchilada sauce. Then I add another layer of the tortillas, nother layer of the chicken mixture, another layer of the enchilada sauce and a thicker layer of cheese. I bake it in the oven at 350 for about 30 minutes with foil on top. I remove the foil and then bake until the cheese on top starts to get golden.
